Spanish Chorizo & Risotto
Serves 4
You will need:
- 4 Swiss Deli® Spanish Chorizos
- 2 cups Arborio rice
- 1 onion - finely chopped
- 200 grams Swiss Deli® Double Smoked Ham - diced
- 200 grams portobello mushrooms - diced
- 1 ltr chicken or vegetable stock - simmered in a separate pot
- ¼ cup parmesan cheese
Sauté the onions in a little butter, add the diced ham and mushrooms.
Add the risotto rice (arborio), sautee in the onion mixture for 2 minutes, season and add 1 cup of the hot stock, stir gently until the liquid is absorbed, repeat until all the stock has been poured, approximately 20 minutes. Uncover and stir through the parmesan cheese, the risotto should be thick but runny when ready.
Grill the Swiss Deli® Spanish Chorizo and place on top, serve with fresh salad leaves and grilled mushrooms.
