Vienna & Pea Soup
Serves 4 - 6
You will need:
- 4 - 5 Swiss Deli® Vienna Sausages
- 2 stalks spring onion - finely chopped
- 1 red onion - finely chopped
- 200 grams jar basil pesto
- 1 cup frozen green peas
- 1 tsp of butter or oil
- ¼ cup of plain flour - sifted
- 1 ltr chicken or vegetable stock
- Crispy noodles to serve
Sauté the spring onions in a little butter, add the green peas and dust with flour while stirring. Top up the pan with stock and leave to simmer for 15 minutes.
Remove from the heat and blend in a food processor, strain the liquid and place into serving bowls.
Heat through the Swiss Deli® Vienna Sausages in a frypan, dice then add the sausage to the bowls and season as desired. For a finishing touch add a dollop of sour cream or garnish with crispy noodles.
