Hot Pot of Vienna Sausage and Kale

Inspired by Austrian recipes, Swiss Deli Vienna is a very satisfying variation of wiener sausages or frankfurters, laced with spices and then smoked.

Serves: 4

You will need:

  • 4 Swiss Deli Vienna sausages
  • 8 slices smoked Swiss Deli Streaky Bacon, chopped
  • 2 medium onions, peeled and cut into sizeable chunks
  • 2 tablespoons butter
  • 400ml chicken stock
  • 2 medium carrots, peeled and sliced
  • 2 fresh bay leaves
  • 4 medium potatoes, sliced
  • 4 fresh sage leaves
  • 2 apples, cored and sliced
  • ½ nutmeg, freshly grated
  • 400g curly kale, shredded
  • ½ glass full fat milk
  • Salt and freshly ground black pepper

Method:

1. Fry the bacon and onions in 1 tablespoon of the butter for about 10 minutes over moderate heat. Add the chicken stock, carrots, bay leaves and potatoes. Gently boil for around 20 minutes until the potatoes are cooked.

2. Add the sage, sausages, apple, nutmeg and kale and simmer on for about 10 minutes.

3. Finally, add the milk and remaining tablespoon of butter and give everything a good stir. You may even want to use a potato masher to make the mixture appealingly mushy.

4. Season with salt and black pepper and serve.
